Learing how to tune properly can be done numerous ways. Alot of us on here are pretty much self taught mechanincs/tuners. Doing ALOT of research on the internet and magazines is a good start. Complete understanding of engine fundamentals is essential into troubleshooting and performance. Just start doing research and learn as much as you can before going to an EFI class. You will learn so much more and understand the finer details of the class.

the answer is to READ.
buy tuning books and before going to the EFI class learn the basics pretty good.
If you go to efi101 with no prior understanding you will most likely not get much..they do try to cram LOTS of info in a day class. If you do come to class prepared, its a different story.
If you know what your talking about youll get to pick Bens brain a lot more..hehe
