Does changing to ITR 5-bolts conversion affects the track width?

Changing to 5-lug does not change track width, but neither does changing tires, assuming you're using the same wheels. Even if you change wheels, but keep the same offset, track width is still the same because track is measured from centerline of wheel/tire tread on both sides. If you change the tire width, the center of the wheel and tire is still in the same place. If you change wheels and tires, but keep the same offset, the centerline of the wheel and tire tread is still in the same place. The only way to change track width is to use different offset wheels or wheel spacers.

Yep, you even have the same size contact patch as your stock 195 tires, assuming you're running them at the same pressure. The only difference is that the contact patch w/ 205's is wider and shorter than it was w/ the 195's, but the area is the same.
