Default How much should I shave my head to raise compression .5?

I'm putting in new crower stage 2 cams, valve train and .5mm oversized valves. I know I'm going to have to get the head machined for the valves to fit, and I was going to get the head shaved a little since it was going to already be there. The question is how much needs to be removed to get a 10.5:1 compression. I'm going to get Type S valves in the future and would like to have the compression at 11.5:1. If this is not a good idea(shaving the head), would a thinner head gasket do the trick and be safe and reliable. And where would one get a good head gasket like this from?
