There's no need to remove all the yellow paint.
To get the best finish possible, start by using water and 400-grit sandpaper. Wetsand every square inch of the wing w/ the 400 to go through most of the clearcoat. Follow that up by wetsanding with 600 over the whole wing.
Let it dry and look for any shiny spots. Shiny spots did not get sanded and the paint won't stick to those parts nearly as well, so go back over any shiny spots with the 600 again.
Wipe the wing down thoroughly to make sure all dirt, dust, and any oils are removed, which will cause the paint to fish-eye if any is on there.
Go to town with the paint and clearcoat.
Finally wetsand the clear with 1500 and then 2000 sandpaper, then use buffing compound to remove the 2000-grit scratches. Follow that up with a swirl remover or polish of your choice, and finally wax.
