Because the Build Your Honda only features the current models. 2001 models aren't on it. Only 2004. I mentioned the Build Your Own Honda so you would know what I went by options.

I think the dealers still have catalogs for the older models. That would probably be your best bet because it will be the most thorough. I doubt you'll get as complete a response on here. Hell, I have a 2001 and I don't even know the options besides what I got on mine.

I picked that up from http://www.edmunds.com ; when I said that I was pricing a 2001 Accord EX those were the only options it offered.

Honda doesn't and never has offered anything in the way of "options". they aren't like Ford or VW. you can get automatic transmission, and leather package on 4 cylinder Accord EX models. now you can opt for NAV systems and airbags as "factory" options. that is it.
all other stuff is "accessories". like a/c on base models, armrests, sunroof deflectors, etc.

The only real option was automatic vs manual transmission. Everything else was considered an accesory. Sunroof visor, different wheels, wheel locks, underbody kit (coupe), side molding (coupe), floor mats, cargo net, spoiler, gold badging, leather steering wheel, leather shift **** (auto), cd player add-on, cd changer, all-weather floor mats, pinstriping (done by dealer), tinted windows (done by dealer), aftermarket alarm (dealer), aftermarket leather (dealer), fog lights... can't think of anything else.
Of course, there were things that came with each model, but I really, really don't feel like trying to type all that out too
