Default head gasket surface

how clean does it have to be, should it feel smooth or be sqeeky clean

Should be as clean as u can get it. I spend a lot of time preparing the surface when i replace gaskets, especially the head gasket. I have always used acetone to remove all traces of oil and a razor blade (use very carefully) to remove traces of old gasket material.
