Any Drawbacks from having same size wheels FRONT/REAR
I know the s2000 comes w/ different size front and rear wheels, what if say I put 16x7 45offset wheels on all 4 corners, what effects would this have on the car's handling?

yes, excellent point and beside that..
the bigger rear tires/rims combo(rwd...) also allow a bigger ground contact.

Actually the rims he is speaking of are 7 inches wide, I believe the stock rims are 7 or 7.5 inches wide in the rear. The increased oversteer comes from having an extra 1-1.5 inches of rim width in the front. If the front sticks better than it already does, the rear will only kick out easier than it already does.

I am running 18x8 all the way around and I have noticed very little increase in oversteer. The car handles great and I'm happy with it. Having said that, you can't push the car as far in a turn as you would be able to with staggered wheel sizes but that has yet to come into play in normal or even spirited street driving. If you plan to go to a roadcourse or autocross then I suggest keeping the staggered stock rims for track use and the aftermarket rims for street use. This is what I've done and I find it's a nice combo.
Before I bought my Volks, I was running 17x7 all around with a 48mm offset. I ran staggered tires(205/50-17(front), 225/45-17 rear) and I never had any problems with it. I went on a couple of canyon drives and it handled fine. Just don't have tires the same size all around and you'll be fine.
