Default Tuning

So my plan was to tune to a specific A/F ratio across the board (but I'm used to turbo cars), but the guy I'm working with says we need to tune to the maximum torque, which can vary A/F in ratio depending on MAP/RPM.

Also, if I am right, what A/F ratio should I tune to?

This is an all-out race application.

Using an AEM w/ UEGO if that matters.

You need to go with the air/fuel that will provide the most amount of power. In a N/A application your not trying to cool down the combustion chamber to the extent as with FI. Typically 13.5:1 air/fuel in WOT/atmospheric conditions is what makes the most power, but each engine is different and some will require richer/leaner. Set up the car on the street with 13.5:1 as a reference air/fuel, then see what the dyno tells you.

So, just to make sure, are you saying that the a/f will be the same across the board, but what exactly it is will take work?

I also have an EGT on every cylinder, will that provide any usefull information for tuning other than a danger indicator?

He is correct - tune for maximum power with a safe A/F mixture (i.e. not extremely lean or rich). The mixture will almost definitely vary across the rev range.

That's why good tuners get paid the big bucks. Actually, I don't think it's that complicated. Just keep an eye on the A/F graph as you're concentrating on the power curve, and you shouldn't have too much trouble figuring out where and how to adjust it.
