Default Valve angle and cutting questions.

I bought new stainless steel valves for my head rebuilding class. Do I cut the valves to match the stock seat inserts or do I resurface the seats with a new 3 angle valve job to match the new valves, or do i re-cut the valves and the valve seat inserts?
Does anyone know the prefered degrees of the 3 angles for a b18c1 head?
