Default Interesting possible electrical/coolant system problem

Alright so ever since I got my 5spd swap I've somewhat recently noticed that the radiator fan NEVER comes one, so I wired a switch to it for now. I also notice my car must have something different going on with the cooling system, I say this because the car runs almost completely cold while on the highway, like by C, and normal 1/4 driving on streets or idling, its definatly way to drastic of a change.

I am thinking (but have little knowledge of the tegs cooling system) some wire got cut somewhere that has to do with coolant bypass to say mabye the intake manifold or some other part thats causing the car to run alot cooler, but might be why the radiator fan isen't switching on also?

I do know that the thermostat works, just by draining coolant and letting it idle topped off till it sucked it down because the thermo opened up.

Any ideas, or troubleshoots I can look into?
