Can you explain how insurance can "screw" you over with money?

the bike is right at 75% damage and so if they total it i won't even get what i owe on it. i'm trying to fix it myself for as cheap as i can.

 

Shouldn't you have them total it and buy it back? The cost to fix that isn't going to be cheap. And its not like you can screw the people who you owe the payments to.
