Default header vs headers

What is the difference between "header" and "headers"? Is there a difference? I heard some people getting all pissed off when using them "incorrectly" ....

header - singular. you only have one header on your car. "i want to buy a header for my motor."

headers - plural. "there are several headers at the shop for you to choose from."

boxers have 2 headers. well, sort of... depending on the design, some are one peice, but there are still 2 heads.
