Ok, when I took the spark plugs out they were sitting in water and there was water in the fuel injector connectors. There is a lot of surface corrosion on the outside of the engine but it just brushes right off. It isnt seized or anything. My question is, is there anything I need to do to this thing other than letting it dry out before i put it in the car?

you should change the rotor and cap, spark plugs, oil pump, water pump, timing belt, clutch, and so on. Do what you can everything is much eaiser while it's out of the car. Trust me

just replace all the hoses, regardless if they are rotted or not. That way it will give you a little more peace of mind

I'd replace all the hoses, the accesory belts, the timing belt, the tensioner, the water pump, the sparkplugs, rotor, cap, plug wires, fluids, filters, coolant etc.
Also make sure the engine turns over freely and is not locked up, prime with oil before first startup, pull valve cover and check the valvetrain/cams.
Pretty much search with a fine tooth comb and you should be alright.
