Default Cooling Problems, need advice

I have a 96 GSR and about a month ago replaced my radiator with a C&R unit. The C&R's only come with a single fan on the tranny side, but this one fan is supposed to outflow both old fans combined. Everything was great until my water pump gave out. I replaced water pump, & thermostat. That solved that. Now when I have the a/c on during regular daily driving i am start to heat up to about halfway on the temp meter. It stays steady there but this rise in temp bothers me. If I turn off the a/c it cools down to normal temp. But as soon as I start the a/c again, there goes the temp! If i am on the highway everything is fine with the a/c on. I live in South Texas, and we are averaging 95-100 degree weather daily.
I am thinking that this weather is just kicking my cars ***.

Should I just add another fan to the a/c side? Or do you think it could be something else?

If the stock condesor fan will still fit with the other fan on there throw it back on and hook it up. It should as its quite small.
