I finished assembling my b18c a few weeks ago... and I primed the oil system properly before starting the car the first time.
Do you have to break-in a new oil pump? It seems that I don't have any oil pressure if my motor sits overnight before I start it again, and the first start of the day is dry unless I prime it first. I started the car the next day (after the initial start and drive), and the oil light didn't go off for about 1/2 second after the motor had been running, and it sounded 'dry' for that 1/2 second or so. Since then, I've been removing my coil wire intul the oil light goes off... but is this normal? The motor never did this before the rebuild.

I'd guess your low on oil if it sounds 'dry'

i really wouldnt worry about it if its only a 1/2 second. it takes that long for the pump to push enough pressure through the system.
there is residual oil in the engine that will protect it for that 1/2 second or less.
but check your oil level anyway. it always takes more on a rebuild.

I've been watching the oil level like a hawk... and its been good.
My electrical oil pressure gauge will sit at 0 for the 1/2 second that is sounds dry, but after that 1/2 second, everything sounds great, and the gauge reads normally.

this is normal for ALL engines on cold start up. all the oil is at the bottom of the pan and it takes appoximatly that ammount of time for it to reach the pressure sensor to shut off the oil light............i wouldent worry about that.

True, but this is much more noticable than it used to be.... it doesn't 'feel' right.
Or I could be full of crap... but my gut tells me that this isn't right.

Mine does that too
Rattle rattle rattle... then the oil pressure shoots up and purrrrrrrs
No problems yet, fingers crossed! Aside from using a preoiler ie a Moroso accumulator or the like, I don't think there's much you can do!

I highly doubt it's necessary in an engine. There's just no gears for it to 'climb', which is the real selling point it has. Oil is pumped to all the necessary areas, or they rotate through the oil.
However, I can see it being effective in a transmission, for example

i know exactly how you feel dont worry bout it lol i noticed the oil light taken like a second for it to shut off when i first threw in my freshly built ls/vtec monstor.. i was so worried about it not getting enough oil that i noticed that oil light and it would eat away at me lol but then later on i found it its normal for all engines!!
