Driving a standard transmission car helps with the "theory" behind working the gears.. but it doesn't help you get used to shifting with your foot.
If you want to learn how to ride, find a buddy with a crappy bike and have him teach you, or more preferably take the Motorcycle Safety Foundation course.
What's best for you is subjective. PLEASE nothing larger than a 600. If you can handle it a CBR F2 or F3 would be on the higher end up the scale, and a Ninja 250 or something being the lower end. Anything you get will be plenty fast for you.

the "theory" of it helped me when i learned how to ride. took me maybe 10 min to get first gear down and the rest came pretty quickly, probably cause i knew in theory how to shift from driving manual so long
