I was looking into this a while back.. 8" wheels in the and front 9.5" in the rear from what I found anyways.
Ya, I think with the Volks the only size that fits with the proper offsets is the 8.5Rear.
with custom made wheels (hre, etc..), they can get you a 10.5 that you can put a 285 rear tire onto!!!!

10.5" will fit in the rear no problem. And even up to 9.0" in the front with aftermarket shocks. But neither is what I'd recommend for most drivers unless there is a specific purpose. With a 10.5" wheel in the rear, it _will_ be slower. On the track, 10.5" might be a tad bit too much so I'd only recommend a 10" if you want to get the most traction without concerns for losing any speed.
For an average daily driver, I wouldn't recommend anything more than 7.5 and 9's in the rear, silimiar to what was suggested.

To elaborate on what Schatten said, he is right but with the wheels you are looking at you will not be able to run over an 8.5" wheel in the rear. Even then I would not drop the car too low or you will get rubbing.
The S2000's offset requirements are fairly high (especially in the rear), so without going to a very expensive 2 or 3 piece wheel, there are really only a couple that fit well. A few that come to my mind are the Volk CE28N's and the Work Meister S2Rs.
With the CE28's (what I am ordering for my S), you can run a 17" x 9" in the rear because they offer that size with a +63mm offset
Just my personal experience, next car Im gonna buy a Nissan so I can fit some wheels with a really deep lip on em
