It'll run like ****. The level of your compression is what decides what octane. If you run lower octane then the fuel will ignite earlier which will set off your timing. Which could cause damage down the road. Just put out the extra 50 cents to a dollar and get premium. Or you could get Regular and spend money on octane booster.

On the fuel door on my SI it says "Premium fuel only". Octane levels vary depending on where you live in the country. California/COMMUNIST state seems to only get shitty 91 octane as the highest. Here in NY/NJ/CT Premium fuel is 93 octane. However Sunoco Ultra 94 octane is available. I use Ultra 94. I'd use the HIGHEST OCTANE available to you. Don't go below 91. You have a high compression motor. Your car will run like ****. (timing retarded, etc.). You should've know this before you swapped in the motor. Don't cry, just buy good fuel..

Higher octane than is required will not make your car run better. Just get what is required and that's enough. Obviously if it says Premium then get Premium. I'm sure Honda took it into consideration that not every states Premium is the same.
