Default needing some installation help here please

okay first off I purchased indiglo hueages for my car check already know how to do that myself. Then i purchased the zex bottle warmer check. Now i got the water temperature guage by hyper industries the thing that looks like it taps into something looks very complicated can someone help me please. OH and one more thing before i go i just got the heads on my car rebuilt and up i was having a bit of a problem. When i blew the heads on my car i got it rebuilt and the mechanic told me some bullshit like the headers which are dc are causing my car to over heat,I looked at him like what the **** have u been sniffin. But ever since I blew the heads with that 65 shot of zex nitrous on my stock motor with intake exhaust and header i dont know what can be wrong perhaps thermostat?

what is wrong with my car thats making the meter on the dash jump like that almost to the h then jump back into the middle like ***** okay? i checked the radiator fluid its to the top almost i dipped my finger in it when it was cold so i know its at that level? what can it be im stumped all the pressure lines are connected?

bad thermostat
I would install an oil temp guage before a water temp gauge
