Default 00 Civic EX Intermittent Overheating Due to Radiator Cooling Fan Not always coming on

Hey all, I have a 2000 Civic Ex that wants will overheat after idling/driving for 30 mins. The cooling fan will come on around 195-205f and then eventually the fan will stop turning on causing the car to reach temps of 220-240f until i shut off the engine and restart then the fan will come back on. What could this be? I've replaced the coolant fan switch at the thermostat 2 years ago with some ebay special. Not sure if the fan or the relay could be the issue. Any info would be appreciated.
