Default 2005 Civic DX Power Steering Questions

Hello all. I'll TL;DR at the top, explain below.

TL;DR: Just replaced water pump, and now engine has a hissing sound and power steering screams if I turn full stop.

Explanation:

I am, by no means, an actual mechanic. I just know the true basics, hence me coming here.
I replaced my water pump this past weekend because my car has had some bad overheating issues. I have triple checked the fuse and relays for the fans (which are tempermental and don't really work much), and am currently bridged on the switch to have them active. Car would start overheating and actually broke the reservoir cap, spewing coolant across the top of my block and hood. (Waiting on ordered sensor to replace, as their is only one in town, between 5 auto stores, and they want $52 for the sensor, which is nuts)
I have no signs of oil in my coolant, or coolant in my oil - I did an oil change as well, and the oil and filter both show no signs of mass bubbling, odd colors, or smelling like anything but motor oil. No white smoke, no fluids in the spark plug wells, no power loss, no white smoke from the exhaust, no CEL and no errors when on a reader.

Since I have reassembled everything, I have not had an issue with overheating yet - I will be test driving for overheating today. However, I have this odd hissing sound coming from the driver's side of the motor bay (I cannot locate the exact spot), and if I have to hard turn the wheel for any reason, power steering screams, and the wheel kicks back in my hand in the opposite direction - i.e., if I turn hard right, PS screams and the wheel tries to kick back to the left, and if I go hard left, screams and kicks to the right.
I did, like an idiot, disconnect the top PS line from the pump for a few minutes, before the video I was watching as a guide told me I did not need to, and I can move PS pump and reservoir, with lines connected, to the top back of the block. I reconnected the line with the two 10M bolts, then moved both pump and reservoir as described. After water pump change out and during reassembly process, I did top the reservoir back off to cold fill line.

Did I get air in the line, and if so, what is the best method to get it out? And... can anyone advise what the hissing sound is? It sounds similar to a cat growling/hissing at another cat before it strikes.
