Default Hello 2002 Honda VT 1100 Sabre

Hello everybody, I have my 02 VT1100C2 Sabre. I have rebuilt and jetted my carbs with the 6 sigma package. And new fuel pump, new plugs and wires, new coils, new voltage regulator rectifiers for a new filter. Carbs have new diaphragms and all. But when I try to run between 45 to 80 mph; and try to give it just a touch of throttle for up a hill or to match speed limit , it starts to spit and sputter. But when I gas it It will vibrate for just a second as it speeds up and then all the sudden it will clear up and take off like a bat out of hell. It wasn’t holding a good charge so I bought the voltage regulator and now it will read around 14 bolts and before the regulator it was only reading 12.5 to 12.8. Anybody know what’s happening to cause this. Thank you
