Default Heating issues with EK3

I have an ek3 with D15Z6, which I had to change the radiator for as had turned to complete dust and so I replaced this with one from Nissens. I also changed the hoses to silicone and changed the thermostat for a Circoli one from EuroCarParts.

Now this is where my problems begin, the thermostat was very erratic so I ordered a new one from Honda (19301PAA306) however my temperature gauge hardly moves. I've driven my car a fair bit and it seems okay, however the radiator fan comes on very infrequently which makes me think its running cool.

I've tried a blueprint thermostat and have changed the temperature sensor and these don't seem to make a difference.

I've noticed that two thermostats exit, one that opens at 78°C and the other at 82°C.

So would like to know if opening too early could be the issue.
Many thanks.
