1998 honda accord EX alarm system
Factory OEM, There is small black keyless or security module that is spliced in through an adapter harness under by the column. It can be unplugged from the adapter and taken out of the loop.
I think it will not interfere with the immobilizer.

Only the Accord EX trim level has the factory security system. The security system on an EX is part of the Multiplex Integrated Control Unit (MICU). You can't really disable the system without affecting other circuits.
The security hood switch is part of the latch. The way the security hood switch works is when the hood is open, a ground signal is allowed through the switch to the security/multiplex control unit. Normally, when the hood is closed, there should be no ground signal coming from the hood switch. If the hood was closed and the security system sensed a ground signal from the hood switch, it sounds the alarm because it thinks the hood is open.
You may have to first loosen the latch bolts or remove the latch altogether; to reach & disconnect the 2P connector to the hood switch if that was the cause of the false alarms.

To access the hood switch connector, Remove the plastic cover held on with a plastic clip, and you should be able to access all the latch bolts or even the 2P connector without removing the bolts.

I remember adding those security / keyless modules at the dealership. Its been 15 years, I know you can remove them. I might need to do the search then.
It might take more than just unplugging it, I cannot remember if the kit has its own harness to multiplex everywhere or sub harness to loop in.

I was under the assumption that unplugging the hood switch and and putting a jumper wire into the harness plug would trick the alarm system into thinking the hood was open therefore cancelling the theft alarm.

You can just disconnect the 2P connector to the hood switch if that was the cause of the false alarms. You don't want to jump the connector, as that will supply the ground to the security system, and the security system will always think the hood is opened
