What parts should I cover with plastic? I'm guessing my distributor and the cold air intake filter.
Also what degresser do you guys recommend?

Otherwise, nothing. Do not cover anything.
Covering/sealing off components may cause them to be steamed which will cause damage.
Simple Green/409 type cleaners, preferable the shop/mechanic versions. These will clean thicker greases off better.
Purple cleaners (purple power/super clean) are very harsh on certain plastics, rubbers, aluminum, and will damage powder coating. Only use if there is a heavy amount of grease in a hard to reach area that does not have any materials that can be damaged. It can be used on aluminum but sparingly and do not allow it to dry or setup on the aluminum, it will corrode it.
I prefer Simple Green and a pressure washer. I usually go to the coin-op pop the hood, spray down the engine bay with Simple Green, let it soak in, then while pre soaking the car with pressure soap wand hit the engien bay to blast off the goo. Just blast over all the components, don't soak the alternator or distributor. Filthy spots are under the distributor, on top of the intake manifold by the valve cover and the battery.
