Is there any shops in the central or even south area in which are trustworthy, or even better, able to dyno tune?

If you are willing to travel go to iLL Garage in Addison. Bit of a drive but best shop in the midwest for a tune. 471whp less then 1 bar 10.1

I would rather not have a 6 hour round trip for random things I would want done. Would have to drop off the car and go all the way back.
