SOHC vs DOHC questions. (Newbie type) ^__^

Heya,
Just wondering about SOHC vs DOHC. I know they are dual vs single overhead cams, so the dual must have exhaust and intake, while the single has one camshaft that does both?
I am just curious, (probably will never have the time to do anything with the info) but is it possible to replace a part of an engine and make it a Dohc? or is it not at all possible?
I know that you can 'mix and match' some parts of some engines, though I don't profess to understand it. (heads? blocks?) I just have heard people talking about it. For instance when some people have done an H23 Vtec conversion.
So, the question is can a SOHC be made into a DOHC doing a similar conversion, and what kind of gains (if any) could be expected?
