Did you have the head checked before you replaced the head gasket, could be warped , also check you pcv valve if you have one.

Time for a full rebuild. Use OEM parts FFS.

smoke, burning through oil, just replaced a bunch of stuff...

I would say that your Headgasket is bad or something else is preventing sealing between block, water, oil and head. It could be brand new but something could have happened to it prior to or during install that wasnt right.

any weird issues when assembling the engine?

^^+1 also might want to see if the rings are bad, should do a compression test and a leak down. Was the head used for ls/vtec before, if that orifice is blocked it could cause that as well. Seems like something is either cracked, broke or lines leaking somewhere. That much oil means something is bad and I would pull the engine and check everything. Or take the intake off and get a better look at the back of the block.

Burning a gallon of oil in a week I am surprised the motor even runs. That is A TON of oil passing through the cylinders and dousing the plugs unless you are leaking it in large quantities as well.

Sounds like you may have a vacuum problem somewhere as well which is making the idle stay high.

I would check the coolant for oil and oil for coolant as well.

Mileage of motor? Did you perform the repairs yourself or have someone do them for you? Definitely sounds like somethings broken, or not sealed correctly. That much oil in one week is a bad sign. How do your plugs look?

Good god, a GALLON A WEEK?!?! My old emgine with roasted rings was a quart every 500 and that was rediculous. I had another engine with bad valve seals thay burned a quart every 1000 and that was even excessive to me.

That thing must smoke worse than a steam engine burning wood at full power.

I cant imagine how that engine is running

Do a compression test. Also check to make sure head gasket wasnt installed upside down by seeing if you have an oil leak at the gasket on the back of the head on the passenger side.
