You can't soften the springs. What is bouncy? What's your ride height at? Inspect the condition of the rest of the suspension, nobody on here can see your bushings etc

Just installed the same coilovers with same result initially on my del sol. Give them a few 100 miles and they'll "break in" so to speak. I have 250 miles on mine right now and the ride quality is improving more every day. I didn't mess with the spring preload's though. Only adjusted the ride height so not to scrub. I also have brand new lower control arms, energy suspension bushings, sway bar bushings with blox adjustable endlinks, subframe brace and tie bar, rear upper strut bar, front sway bar bushings replaced with a megan xbrace installed, and three point tower brace. So while at first it was super stiff and bouncy over bridges and such it has started to ride so much better.

Give it time lol.

Just re-read your post. If you let the actual springs all the way out, your ride quality is never gonna be good because your shocks are doing all the work. You need to run the collars back up on the springs to give them something to work with.
