Default Factory Paint vs High Quality Body Shop Paint?

What's the difference besides the factory paint is what the car came with when bought? Since all my friends seem to bash on body shop paint for some reason, to me they look the same. They are like no matter how much you pay for a high quality paint job, it will never be the same as factory and they say its noticeable too no matter how well its done. Its really annoying sometimes since I have a $3K+ EBP paint job on my show car, EM1, to me it looks a lot better than factory paint but they are all like nothing beats factory paint. So what's the difference?

the biggest difference in a factory paint vs high quality body shop paint is, NO shop can duplicate the factory's E-COAT primer application. which is applied by dipping the car in an electrically charged deposit before it is base and cleared...

other than that. Paint is paint... different qualities of paint YES (these different qualities may give you better finish visually or may last longer and vise versa)...

but if you're in a high end shop, and assumign they know what they're doing. they are using good paint and are knowledgeable in how to spray it evenly and properly etc etc.

as far as baking goes... all paint manufactures have specifications on how their paint is applied and dried... common baking temperature for most paint brands i've used, off the top of my head is 149F degrees... paint itself will air dry if just left to sit... but baking it speeds it up faster and ensure's it dries evenly at the same time.
