I got that down pretty well (but we all know that it's the easy part). Then I go and feed in some 0.045 filler (308L) and its not as pretty. The gap is quite small. Should I be using 0.035 filler?

The issue is the bevel. If you have that small of a bevel and do a root pass then .035 would probably be better because you dont need all that much filler to close the gap. If you did a bigger bevel with a root pass and then .045 it'd prolly be spot on.
