Did I bend my valves?
I am changing the timing belt on my 2000 V6. While the belt was off I must have bumped the back cam sprocket and it turned CCW and I heard something tap a couple times when it stopped. While putting it back it took off the other way and made a tap sound again when it stopped I was able to slow it down that time before it hit. Is there a way to tell if anything is messed up before starting the engine. I was also going to do a valve adjustment after. Will I be able to tell with the cover off?
Do a compression test, or even better would be to do a leak down test. However, If all you were doing is turning your crank/cam by hand I highly doubt that you would have bent a valve. Never hurts to check though.
So if a valve was bent it would stay open when the engine is turning over?
When I do the valve adjustment couldn't I have both valve covers off and turn the motor over by hand and watch the valves to see if any are sticking?

A bent bent valve won't always be that obvious on the rocker side of the head. It's not like it will always stick and be that obvious. 0.005mm would be enough to make the valve not seat properly. A gap that marginal would not show to the eye on the upper end.
However, as I already said. If this happened due to the cam rolling due to valve spring tension or you did it turning it by hand. It wouldn't have bent a valve that easily.

Great, thank you very much. I was beating my self up thinking I messed it up. I will go get a leak down test set tomorrow and check that. Thanks again for the help.
