So I went to pick up a new thermostat and gasket. I guy gave me something that looks more like an o ring, is that the correct gasket? I have only seen the gaskets that are more like a diamond shape. I dont want to take it apart and end up not having correct part since its my only vehicle right now.

Looks like you got the right part to me, several sites show that kind of 'O-Ring' as the gasket for a 99 Civic SI thermostat

That is it, much thicker than an o ring.
