s2000 wheel fitment: 18x8 18x9 et42

For an S2000 with rolled fenders, how would the fitment be on this set? What tire size should I run?

A lot of the wheel/tire size options listed on that site do not stick to a safety standard that corresponds with either the automobile manufacturer or the tire manufacturers. A few do, but a lot do not.
