what can i do without under the hood?
I will try and keep it short and sweet.
If I run a mechanical oil pressure gauge do I need the OEM sensor on a crx? and what do I do with the connection... leave it hanging? I assume all that will happen is the idiot light on the dash will be on?
Can I run without a charcoal canister? Then plug all vacum lines associated with the canister?
And finally fast idle valve, same as above. Unplug it and not worry about it?
Will these cause any issue as far as performance and reliability?

If you unplug the press switch the light just never comes on.
Plug the vacuum lines for the charcoal canister but leave the one for the tank open so it can breath.
FITV can be eliminated, so can all of the coolant lines on the IM. You have to leave the IACV plugged in even if you don't use it though.

I dont see why not, i would never do that but it can be done. Also They sell a t fitting that you can use to screw into the block and then plug your line for the after market gauge in and then plug the factory one in as well. It is better to have two then one, the line to the after market gauge could get clogged and then you will see no oil pressure but in reality you are fine. I would not want to come off track for a stupid reason like that.
I think that would be one of the area that is gray, or also who would notice if they would not be connected.
I like the oil light though, who really has time to keep looking at the gauges it is nicer just to see a "oh **** light" and get the car off the track a soon a possible.
The under hood of our ITS Integra looks like this right now, we still need to delete the ABS

what we removed
All the abs stuff, re routed the system and added a adjustable prop valve in the car
All the a/c parts
All the emissions stuff
All the charcoal canister parts and re vented the tank with a one way valve

Well I believe OEM oil light comes on at like 3 psi or something. By then the damage is done. As far as the ficv I meant just unplug it as my harness has been cut
