I have a Fidanza 7lb flywheel and an Exhedy pressure plate with the Exhedy clutch. My question is can I switch the clutch out with a Stock one, keeping the same Fidanza flywheel and Exhedy pressure plate? The Exhedy clutch slips now.

 

As long as its the "Street" EXEDY (stock style) and everything is in proper working order - Yes.
