89 civic shuts down, fan doesnt come on
HI guys. 89 civic here,
-The car runs fine and the suddenly dies after it heats up to about midway on the temp, but doesnt go above midway.
-The car will crank over fine but not start until the engine has cooled down all the way down to the bottom of the temp gauge
-I noticed the fans never kick on, its as if it shuts down right as they should come on
-Thought it was the ignition coil at first, replaced that
-The check engine light comes on as the this happens and the car dies

Is it getting spark when it gets hot and will not start? Pull the plug wire and use a spark tester or another spark plug to check. Also have you checked the codes on the ECU?
First test the fans. Run a line from the battery and touch the power lead on the fan, If it don't turn, there's a problem. If it does work, then test the fan relay, It sounds like when the fan comes on, you loose power, so there may be a drain. You may want to check the alternator to make sure it is pumping enough juice. Start car, take multimeter and check how much voltage is getting back to the battery..
