Default It's getting cold out

Well, It's starting to get cold up here in canada and for the last month I haven't figured out my cooling issues.

The car
1989 honda civic ef with a b18b1 swap in it from a 95 teg.

I have replaced the coolant,50/50, thermostate, hoses, and rad.

So here are some different ways i've tryed hooking it up.

If i hook EVERYTHING UP LIKE STOCK. the rad fan will not turn on and the car will overheat,

If i hook everything up like stock but take a wire and attach it to the GREEn/YELLOW wire on the plug at the thermostate and hook it onto the temp sensor wire. Rad fine will turn on and I can let the car idle all day.. go for a drive.. and 20 minutes it will blow nice warm warm air but It seems to over heat or something because I can't touch the motor it's so hot(this was before thermostate and that replacement.

Ground out the fan and have it always running have the plug on the thermostate housing unplugged and the stock temp sensor unplugs and she runs cold.

I'm really stumped on this.. any shed of light will help

The way you worded your post makes it difficult to follow.

Did you have cooling issues in the summer?
Are all the hoses connected correctly?
So you think your car overheats because the motor is hot, not because the gauge says so?
I don't follow what you are doing with the wiring, but did you test your radiator fan switch? You can take it out and test it by putting the end of it in boiling water. Not sure what temp your switch is supposed to switch at, but measure for continuity when it gets hot. I think I had one in my B2 go bad and it was supposed to switch about 190F.

No cooling issues in the summer, at all. i'm sure the heater core hoses are correct.. the one from the head goes on top and the one right before the thermostate goes underneather?

Both heater hoses are hot coming out..

Well, seem my RECIRC in the cab gets way hotter then the direct from the motor, Also.. my air fixer under the dash.. is that leaver supposed to turn in or face the fire wall, because Its facing in when the heat is turn on..?

the fan pulls air, it has a shroud and the civic is a FULL lenght... i touched the piping leading into the car and it was HOT boy.. also both hoses leading in and out where nice and hot today.. but still inless i had the switch on recirc heat it wouldn't blow hot.. switch it to recirc it's instantly blowing hot air? could buddy have swapped the wiring when he put it back together.. also the recirc blows pretty hard and the non recirc not as hard.

It's getting pretty unstandable as the days get colder. car now sits around the 125 F mark on the autometer gauge. which is taking the temp of the upper rad hose.
