In general, for wet weather, I would choose the tire which (a) has the most tread depth and/or (b) has the most void area in the tread pattern (the worst are the ones with just two circumferential grooves like the new V710, and almost as bad are the big tread block patterns like the NT01, etc). Of the ones you've listed, I would go with the RE01R.
If it's dry with temperatures in the fifties, that's not THAT cold, and track tires warm up, so I would just use whatever you would use in warmer weather.
Depends. Standing water? Go for tread depth. Damp? Slicks. Of course, you've got a bunch of really dead tires to pick from, so I'd probably go with a street tire or whatever is youngest out of the bunch. Comparing new tires, I wouldn't hesitate one bit to run V710's in the damp over the rest you mentioned. Only one I'd pick over the V710 would be a Hoosier. Standing water is when you have to start worrying about tread depth/siping. That's when I break out the Hoosier Radial Wets. :D
