Another question that i have is....

What is the difference between a 2.5", a 2.75", and a 3" air bypass valve for my aem cold air intake?

 

it's the diameter of the valve, it has to match the size of the pipe i.e. you can't put a 3" bypass valve on a 2.5" pipe!
