I did this as well on a road course several times. It's quite fun with paddle shifters but our CVT transmission in Europe can't handle a lot of power. 120 hp seems to be the maximum, so it's not really suited for racing. Other than that, it's a great drive and I'll do this again in summer.
I wouldn't do it on multiple occasions without a trans cooler, at least if you intend to keep the car for a long time. I'd probably do a trans fluid change with ATF-Z1 before and after the track day as well if it were my car.
Due to its complexity, an automatic transmission is usually the weakest point in any car and is one of the most expensive components to repair or replace. However, unlike the '99-04 Odysseys and '98-02 Accord V6es and 4-cylinders, Fits haven't proven to have problematic transmissions thus far - so a used transmission from a salvage yard seems to be a safe bet at this point and is usually the cheapest solution to an automatic transmission failure.

ITE is a road racing class for sanctioned competition events, and one in which you wouldn't be running a stock Fit anyway. The original poster isn't looking to race or be competitive, he's just looking to run at some open track days or HPDEs. Most (if not all) non-competitive driving events will allow cars with automatic transmissions.
