Default most efficient way to prep bay/interior?

i am getting near finishing my motor so i have started planning on the clean up afterwards. once i've done the research and ready to go for it, i will pull the motor back out i intend to do a full engine bay and interior paint. i was considering some rattle can but would rather use it as a learning time for a real outside paint later.
only thing is i am seriously dreading the cleanup and sanding with the immense amount of curves and corners..
i went back 10 pages and searching for interior only gives me the few threads on panel painting. is most of this gonna have to be done by hand as it appears to be? any tips for this?

along with this too, i am an auto tech and have the shop access and a nice compressor but painting will have to be done on a weekend. i will be waiting for a long 3-4 day weekend. possibly christmas -> new years we are off work, but i think i would have to be psychic with the weather. though we have had 60*+ christmases.
i would like to have the interior as ready as possible so that i can pull the engine and have only the bay to prep for that weekend. since primer, as i've read, absorbs moisture, how much can i do ahead of time to save time?
our old body guy we used a while back i watched him all the time. so i am famlliar with a lot of this. but i seem to remember him saying once that the primer would be ok for a little while as long as you don't sand on it until you are ready to spray.

umm read Project Car's 14 or 13th edition of the CRX that will help you out. They have cool/modern tips like dry icing the interior and touch up on alot of what you need to accomplish. anyways buy the magazine
