Dude you can get really creative with weight reduction.
Entire dash center consol. totally strip the car if you want.
Seats though are a big load. Speakers and carpet.

I did all the obvious weight reduction on my CRX.
Dead weight:
Lightweight Hood
Traction bar
Removed spare etc...
16 lbs racing battery
Removed passenger seat
Rotating weight:
8 Lbs flywheel
Lenso's
Beyond this IMO everthing else isnt worth it. Interior doesnt really weigh much. My passenger seat weighs 26 lbs. Unless its a drag car removing the AC for the 30 lbs isnt worth it.
You could go with HF bumper supports for a little weight savings. I dont think they would support my Benen tow hooks well enough so I left my Si supports on.
Driving skill> weight reduction. I would get lots of seat time before you start butchering the car.

that is about what i did with my 90 civic cx. weighs in at 2000lb in race form.
but i totally disagree with you.
for my buddys project, a 1990 civic dx, we GUTTED the car, removed all the extra seat belts, HVAC system, every interior piece, gutted dash, rebars. still has all its glass, and in race form it weighed in at 1770lb.
well worth it for a full out race car.
