You should. Pretty much any stock mustang prior to 1998 is underpowered and overweight. There are a few exceptions.

Are we seriously having this conversation ?

OP: Save your money, research more. I personally think it is too early for you to dump your money into something you don't have a good understanding in. You are asking questions, so this is a good start. Research, come back to this topic in a few months and you'll lean more to one side than the other.

Well here are some interior mods I've done so far.

JDM Carbon fibre gauge bezel

Custom red stitched leather boots and arm rests

JDM Type S red-stitched wheel (new leather from Bartosz in Poland he also did the boots and armrests too).

Type S seats

I also have the Honda OEM accessory 6 disc in-dash cd changer, the carbon fiber trim kit, the rear sunshade, red stitched shift ****, Kicker KS 62 component door speakers, & JBL 6x9s for the rear (sorry no pics)

I got the seats on ebay. The fronts came from Jhot imports (Texas), and the rears came from prodejayautosales in Florida (it looks like they are in Oakland, CA now).

The gauge bezel came from jdmland.com
The shift boot, ebrake boot, ebrake handle condom, console cover, and armrests came from bartosz's group buy on pp.com (custom made in Poland)
The steering wheel came from Bartosz too.

A new shift boot/**** is always a nice start. From there, maybe look into having the stock seats re-stitched/re-covered. The dash, well, not much can be done there.
Lots and lots of JDM Squash Air Fresheners....
I wouldn't mess with a Race Steering wheel/seats unless you're really planning to race....

Best interior mod ever?-----And the requirement of it!

If you're NOT racing, just find a place that can recover your stock ones. Other than colors, there is no difference between S-Si-VTEC
You can look into a DC2 TypeR steering wheel but I have no ideas on the use of the Airbag when you do that as I don't recommend a non-srs wheel in a street car.
