Default thermostat replacement? OEM or something else?

It's about time to drain and flush my coolant so I might as well replace my thermostat while I am at it because I notice that it takes a while to warm up. I occasionally track my DD. should i stick with an OEM thermostat or get one that will open at a lower temperature like 160? also, if i go to autozone and just grab one off the self, would it fit? I've read a few threads and it seems like the only difference between one thermostat from another is their operational temperature, not their size, dimension, fitment. can someone confirm this? thanks.
