There is something like go kart racing for aspiring superbike riders, it's called mini-road racing. There are a bunch of clubs accross the USA, Europe, and the rest of the world. They use small 50cc to 80cc two stroke bikes, Honda NSR's and Yamaha YSR's, kind of like go karts. The reason it is so attractive to folks starting out is that the cost of the bikes, and the maintenance, tires, equipments, etc., is so low compared to full size motorcycles. Another advantage is that the speeds are alot lower, so there is less likelihood of injury to the weekend warriors. If you want to start racing, without spending alot of money, or risking serious injuries, it is probably the best way to start before you head off to challenge Rossi.
