Which seats sit lower than stock?
A del sol with a seat pan swap will sit lower from what I've read. A composite or t-frame fixed-back race seat should sit lower if you can go without sliders.
For example... I have Sparco Sprint 2009s, with sliders and bases (direct from http://www.wedgeengineering.net/ ), and the butt sits about 1/2" lower than stock. But with these seats you are sitting up straighter, so it is almost back to normal for headroom. Be forewarned... such a setup costs $600-$800 when its all said and done for both seats.
Now that I have had them on sliders for a while and found my favorite spot, I'm probably going to remove the sliders and attach the seats directly to the base, so I can get another half-inch.
