3 12" or 1 12" & 2 10" Subs
You probably wants SQL so go for a single 12" sub. 3 12" would double the cone area and will be louder depending on the install. Just stick with 1 12" as mention before.
I would go for one of each 10" and 12." 3 is unnecessary unless you have them tuned and set differently. Unless you are going to do audio comps, I wouldn't recommend it. Not to mention you'll lose a lot of trunk space.

This is the system i was thinking about getting. Trunk space isn't really that big of a deal. Its going to be put in a 99 sedan.

In generally I was speaking of range of bass. The 10 could be set differently than the 12 to give a wider range of bass response. It also depends on the enclosure.

What kind of music do you listen to most often? Like mostly in the Rock Area, or Mostly Rap / Hip-Hop? If you listen to rock, get the 2 10" but if you listen to rap/hiphop. get the 1 12". Rock is more faster bass so the 10s will move easier and give you a nice loud bass but still not too much. rap will sound great with 10"s too, but better with 12". I listen to all type of music and im running 2 12" subs and with just a little tune from the deck between music, give me the sound i want all around.

I listen to everything rap, rock, country, hip-hop, reggaeton anything that sounds good to me or the wife... i think i might go with 3 12" and install a power switch for the amp that powers 2 of the 3 subs so i can power them off when i want only one sub on.

If you face the sub toward the seat, it isn't as "loud".
I want a lot of bass but not to where i cant hear the music. My front and back speakers are going to be 75W (RMS) each. Facing the sub towards the back seat wont be as loud? Im guessing the reason it wont be as loud is the space between the seat and the sub? Most of the time I'm going to have the back seat down & even when it is up I'm going to leave room between the sub and the seat. That is also why I say 3 subs once the back is closed its harder to hear the subs.

Yeah, I have a 12" but its fully tuned up just threw it in and left it. It sounds good tho but I don't really hear it the way I would like to. 12" MTX & 600W Kenwood Amp.

The subs are dual 4 ohm voice coil. Meaning each one can be wired to two ohms or to 8 ohms. This means you need one 500w rms 2 ohm stable channel for each sub, or a 1000w single channel stable at 1 ohm or 4 ohms for two of them.
This kind of power means upgraded alternator, battery, and grounds. It also means you need to run a 0/1 gauge power cable.
It also means you will be spending a **** ton of money.
So what is your budget?

Ok, Lets say I have a budget of 1500. I’m looking for a all new system head unit, speakers, subs, & amps. I would like to have 2 subs I think 3 is to much and 1 isn’t enough.

If you still want an Alpine amp you could look into their 1000w rms amps. You will need to get the dual 2ohm voice coil type Rs. Wire each sub's coils in parallel, bringing each sub down to 1 ohm and then wire the 2 subs in series, bringing it to 2ohms, which is what the Alpine amps are 1000w rms into 2ohms.
You are looking at a price range of $300 to $500 if you buy online for either of the 1000wattrms alpine amps.
