Is there any way to turbo an ek hatch with a GSR swap and keep the AC and Power Steering?

There's nothing more to say here. You've been given leads of names of companies that can provide AC and PS compatible turbo kits and systems. Your best bet at this point is to contact them via PM, E-mail or phone (Project DC2 has given you the best lead here and is owner of Spoolin Performance, so your work is about done here) and inquire more information.
