It should be fine, as it is at least the minimum displacement for most highways. Most people I know with 250's get tired of it very quickly. It's very high and loud at cruising speeds. I'd recommend a 500 or something similar.
A 250 is very good for practice and it's good to learn how to turn with. You can throw most of them around. If you have a good price on one, go for it. But if you have some extra money, go for a slightly larger bike.
